I didn’t eat enough of the osmanthus cake I made the previous two days. Today, I used it to match the yam to make a [Yam osmanthus cake].
The method of this cake is simpler than sweet-scented osmanthus cake. The yam is peeled directly, steamed, and pressed into a puree with a little osmanthus flower. Simply pinch it and you can eat it. 1. First, prepare the ingredients needed to make this [Yam Osmanthus Cake]: I prepared two long yams, the weight after peeling is about 250 grams. Dried sweet-scented osmanthus is very light, one gram is quite a lot, which is quite enough. The sweet-scented osmanthus is boiled with rock sugar. The sweetness is not too high. In order to make the yam puree taste better, I added 5 grams of white sugar to increase the sweetness. You can also decide according to your own preference.

2. Wash the yam with clean water to remove the soil on the epidermis, and then use a peeler to remove the skin. Move it to the chopping board and cut into thin slices, as thin as possible, it is easier to mature when steamed. If you have an allergic reaction to yam, you must wear gloves all the way from this step until the yam is put into the pot.

3. Put the cut yam tablets into a flat plate and put them in a steamer, a pot with cold water, and steam for about 10 minutes after boiling the water. When the time is up, use chopsticks to easily penetrate the yam tablets and they are mature. Take out the plate to dry.

4. While drying, you can put the sugar and dried osmanthus in, the temperature can make the sugar melt faster, and the fragrance of dried osmanthus can be stronger. After being air-dried for a while, you can use a spoon or fork to press it into a puree. Press it as finely as possible to taste better.

5. Spread the mashed coconut on a plate, take an appropriate amount of the pressed yam paste, roll it in the mashed coconut, and then put it into the mold. I use a mooncake mold. If you don't have it, you can squeeze it into a shape you like. Give a little strength when pressing the mold, slowly push it away, and the [Yam Osmanthus Cake] is ready.

Cooking tips:
1. If the yam has a lot of dirt on the skin, rinse it with clean water in advance and then peel it to avoid pollution to its flesh.
2. The fully steamed yam pill can be easily pressed into puree. If it feels more difficult to press, it means that it is not too mature. You can steam it again in the pot.
3. In the steamed yam plate, there is excess water to be kept clean. The yam mud that is pressed by too much water will be thinner and not easy to form a mass.
