2. The method of homemade pepper oil

There are many ways to make pepper oil, such as oil solution method, oil immersion method, oil shower method, physical pressing method, etc.
Today we share two methods of making pepper oil commonly used by chefs:
The first method: the fragrant and hemp production method of pepper oil
Material: dried pepper seeds
The first step: prepare 50 grams of dried pepper seeds. Pick the ones with bright colors and full and uniform particles. The pepper oil made from this kind of pepper seeds will taste numb and fragrant. Wash the pepper seeds first, and then dry them.
Prepare 200ml cooked oil, what is cooked oil? It can be cooked oil, or it can be oil that has been fried in fish and chicken wings.
Prepare a bowl, pour the pepper seeds, then pour in the cooked oil, buckle a plate on top to prevent the inflow of steam, but also prevent the loss of aroma, pot in cold water, steam for 30 minutes after boiling.
Take it out after 30 minutes, the steamed pepper and sesame flavor is full, but the fragrance is obviously not enough, because it lacks the kind of fragrance that can only be achieved by high temperature. At this time, start the second step, filter the pepper oil to separate the oil from the pepper.
Step 3: Heat the pan, pour the filtered pepper seeds and a little hot oil into the pan, turn on a low heat and fry slowly.
After the prickly ash seeds have a strong aroma, pour the prickly ash seeds into the prickly ash oil again. At this time, the scent of the prickly ash oil comes out. Cover the lid again to reduce the volatilization of the scent. After letting cool, filter it into a glass bottle, seal it and store it for a long time. Do not put it in a plastic bottle, it will taste bad over time.
The fragrant and hemp pepper oil is ready.
3. Homemade method of sesame oil:
Ingredients: 20 grams of Chinese pepper, 20 grams of sesame pepper
Step 1: Put the pepper and sesame pepper in a bowl, add an appropriate amount of warm water and soak for 10 minutes,
The purpose of soaking is to remove dust, impurities and peculiar smell of pepper and sesame pepper, and to stimulate their fragrance, and at the same time, to avoid deep-fried frying when frying.
Prepare a handful of coriander and clean it,

Step 2: Heat the pan, add three spoons of farm rapeseed oil, burn the rapeseed oil and turn off the heat. When the oil temperature is about 50% hot, put the ginger, onion, and coriander in, and stir-fry on a low heat. , Flip with a spoon to heat the spices evenly to stimulate the fragrance inside,
When the coriander becomes soft and the onions are fried until golden brown, it is almost done. We use a colander to remove them.
The purpose of this step is to extract the vegetable oils from ginger, onion and coriander to enhance the fragrance of pepper oil. The remaining impurities must be cleaned up, so that the prickly ash oil will be clear, good-looking and taste better.
Drain the soaked pepper and pepper and set aside.
Turn on the fire, increase the oil temperature to 40% hot, the oil temperature is calm and does not smoke, pour the pepper and pepper, stir constantly, and fry for 1 minute,
Fry until the color of the pepper and pepper is turned off, control the oil and remove it. The purpose of this step is to effectively remove the water in the pepper.
Spicy pepper plus Sichuan pepper, green and red, is it beautiful? Sichuanese also call it Longfeng pepper.
Turn on the fire and increase the oil temperature to 60% hot. When it starts to smoke, turn on the medium and small fire and re-fry the peppercorns and peppers. Turn on the fire again, increase the temperature of the oil to 50% hot, the surface of the oil is slightly smoked, put the pepper and pepper in the pot again to fry,
Fry on a low fire for about 3 minutes. At this time, the rich aroma will come out and we can turn off the fire. Add a few lids of high liquor, high liquor can inspire the aroma of pepper and pepper. Pour the fried prickly ash and pepper into a basin to let cool.
The fragrant and hemp pepper oil is ready. Then it is filtered with a strainer to bottle the pepper oil.
