The ingredients needed are:
Old tofu, starch, flour, eggs, sugar, white vinegar, light soy sauce, tomato sauce
Production Method:
1. First prepare a piece of old tofu, cut it horizontally into two slices, then cut it into two cm long strips, and finally cut it into 2 cm cubes. Add a spoonful of salt to a pot under cold water so that the tofu will not break easily. Boil for two minutes after the water boils.
2. Taking advantage of this time, let's make a batter: a spoonful of starch, a spoonful of flour, add an egg, first stir it with chopsticks, pour in a little water and continue to stir it into a paste for later use.
Make another sauce: two spoons of sugar, two spoons of white vinegar, one spoon of light soy sauce, three spoons of ketchup, one spoon of starch, add appropriate amount of water, stir well and set aside.
3. Pick up the tofu to control the moisture, put a small amount of tofu into the prepared batter several times, so that each piece of tofu is coated with a layer of batter. Add more oil to the pot and heat it to 50% hot (you can hold the chopsticks and put it down to try the oil temperature, it can make bubbles quickly), then quickly add a piece of tofu, and fry slowly on medium heat until the surface is slightly deep. Yellow is fine, take it out and transfer it to the plate for oil control.
4. Put the oil in a slightly higher temperature, pour in the tofu cubes, re-fry for 20 seconds on high heat, and fry until the surface is golden and crisp (the effect of re-frying can make the tofu more crispy and not soft), remove it for use.
5. Leave a little base oil in the pot, add the adjusted sauce, cook over high heat until the soup becomes thick and foamy, then you can pour the fried tofu in and stir evenly to make the crispy tofu Wrap it in the sweet and sour sauce and quickly cook it out (don't stir fry for too long, otherwise the crunchy tofu will be soft), and the delicious sweet and sour tofu is ready.
