Fermented things are really not suitable for making, because the speed of kneading by hand cannot keep up with the speed of fermentation. You often knead and knead, and the dough is fermented, so the kneading is not smooth, let alone the film. Of course, there are chefs. But at the current manual stage, it is still simple to make. It is more suitable without kneading or fermenting. So today I decided to make a red bean and glutinous rice cake. Production process:
The prepared honey red beans are taken out in advance to thaw. You can buy ready-made honey beans or make them yourself. The method is very simple. Soak the red beans for a few hours in advance, add water and cook them, but do not boil them. Keep the whole grains, then drain the water, add sugar while hot. Evenly.
Prepare half a sweet potato (about 200g). If there is no sweet potato, you can use purple sweet potato. Peel and cut into thin slices. Steam it in the pot for about 20 minutes.
After steaming, press it into puree with a spoon while it is hot, and let it cool for later use.
Find a suitable mold, round and square ones are fine. I used a 6-inch open-bottom cake mold with greased paper or a layer of oil on the inside to prevent sticking, then spread the honey beans (about 360g) on the bottom and press it with a spatula. Tight.
Next, prepare 180g of glutinous rice flour, 45g of corn starch, 30g of white sugar (because there is sugar in honey beans and sweet potatoes are also sweet, so less sugar is added), and 270g of milk.
Put all the ingredients on top and stir evenly to form a fine paste.
Pour the stirred batter into the mould covered with honey beans, put it in the steamer, and steam for about 25 minutes after the water boils.
After steaming, take it out of the mold and let it cool slightly. Spread the mashed sweet potato halfway, and smooth it with a scraper.
Spread some water on the surface of the knife, cut it open from the middle, and then turn the side without sweet potatoes over and cover the side with sweet potatoes.
Wrap it in plastic wrap, keep it in the refrigerator for 1-2 hours, and then cut into pieces.
