Sometimes the grilled fish also forgot to put salt and so on, so I didn't remember the taste.

First we prepare the ingredients: 1 grass carp, 1 tomato, 2 eggs, 1 ginger, 6 cloves of garlic, 2 chives, light soy sauce, oyster sauce, sugar, pepper, chicken powder, cooking wine, salt, peanut oil, corn starch
Practice and steps:
1. Clean the grass carp first, chop it into pieces and then wash it with clean water, take out and drain the water.
2. Prepare the ingredients, peel and shred ginger, mince garlic, chop one chive into onion knots, cut one chopped green onion, and cut tomato into small pieces.
3. Put the fish cubes in a plate, add half a spoon of salt, a spoon of light soy sauce and oyster sauce, a little pepper, an appropriate amount of cooking wine, and mix with your hands to marinate evenly for 20 minutes.
4. After about 20 minutes, beat in two egg yolks and mix well. Add an appropriate amount of cornstarch and continue to mix evenly.
5. Boil an appropriate amount of oil in the pot to 50% heat, add the marinated fish pieces one by one, and fry them until golden brown. After the fish pieces float lightly, you can take out the oil to control the drying.
6. Leave a proper amount of base oil in the pot and add the minced garlic to sauté, add tomato diced and stir fry a few times, add a proper amount of water, add a small amount of salt, a spoonful of light soy sauce and oyster sauce, a spoonful of white sugar, a small amount of chicken powder and cooking wine.
7. After the water is boiled, put in the fried fish pieces, cover the lid and simmer for 3~5 minutes, then pour in an appropriate amount of cornstarch and stir evenly. After the juice is collected on high heat, put it out of the pot and put it on the plate. Sprinkle with chopped green onion.
Tips:
1. The best choice of grass carp is about three catties, and the size should be even when chopped.
2. When frying, just put the fish in, don't move it, wait until the fish is deep-fried and then mash it.
3. Don't add too much water when simmering later, just cook the fish just softly, so it tastes better.
